It’s been awhile…a long while

Well hello everyone! It has been over a year since I last posted. Crazy how time flies. Anyway, while I was away, I never stopped reading the blogs that I know and love, and I didn’t stop running or taking yoga or any of the fun stuff I blogged about in the past. I guess, my life just sort of took over and for the past year I was busy with things relating to me, my career and my family and that was where my time and energy was focused. But, I’m back! I’ve committed to making this blog a part of my daily priorities again because I’ve felt myself yearning to write again!

But first, let’s have a short recap of what’s happened since I’ve been gone.

First, I got MARRIED! That’s right! On March 3, 2012 I married the love of my life in Phoenix, AZ. It was a beautifully sunny day filled with family, friends, laughter and love and it was honestly the best day of my life to date.

And after we got married, we went on a fabulous 14 day honeymoon cruise through the Caribbean all the way down to South America! It was honestly the most amazing trip of my life. To unplug and be so far away from our normal lives was seriously a once in a lifetime experience.

After coming back to reality renewed and refreshed the husband and I had a whirlwind of a spring/summer. With a few close friends celebrating their own weddings we had quite the travel schedule. And in the midst of all of that, we added a new member to our young family. Our wonderful dog, Peanut!

She has truly become a part of our family and I can’t imagine our life without her. She is quirky, energetic, yet very lazy at times and just so much like us it’s crazy! We adopted her from the Humane Society and it was one of the best decisions we’ve ever made. Oh, and if you’re wondering about her cute little tongue sticking out of her mouth, understand that I didn’t just catch a good pic of her…she literally has her tongue sticking out ALL the time. It’s the cutest thing ever!

Other than those big updates, I have just begun training for the Phoenix Half Marathon on March 2. This will be my first half marathon to date and I’m super excited to reach this new milestone in my running career!

Chocolate Chip Dough Balls

Happy Sunday everyone! Today was a busy day for us. After sleeping for about 9 hours last night. (Ahhhhh sleeeeeep) We got up, got ready and promptly headed to Buffalo Wild Wings to watch the Lions game. After a nail biter, the Lions walked away with a W, yippee! We came home and headed right back out to Target to get a bunch of these…

…in order to start packing our apartment = booo. But moving into our new house = yay!

However, while at Target, I also bought the last two ingredients needed to make these…

Chocolate Chip Dough Balls! I literally copied the recipe from Diana at The Chic Life, so hop on over here to find the recipe!

However, I snapped photos my whole way through the baking process so here is the recipe in picture form for your viewing pleasure!

True to cookie baking form…gather all of your ingredients and mix all your dry components together…

Then, add your sugars and wet ingredients into a medium sized bowl and stir until well mixed…

Then mix your dry ingredients into your wet…it totally seems as if you did something wrong and measured out your wet ingredients incorrectly…however as the recipe states…keep mixing and it’ll form a stiff dough…

Then mix in your chocolate chips…I used 1/2 cup Nestle Semi-Sweet

Then you are supposed to chill your dough for at least 20 minutes…I can say I literally threw them in the fridge for 20 minutes on the dot and it worked out fine. I used this time to clean up the kitchen…see?

Once 20 minutes had passed I popped the dough out of the fridge and started rolling them into balls. I believe the recipe says to use a small melon baller or sorbet scoop but I didn’t have either so I used a 1TBSP scoop. It worked perfectly. Scoop and roll….scopp and roll…

and then I sprinkled some sugar on top, for good measure, and popped them in the 350 degree oven for 10 minutes on the dot.

They came out golden brown on the bottom and just the right amount of doughy on the inside…mmmm mmmm goood.

All the while, Justin was couching it…playing on our iPad…

The rest of my evening was spent packing, packing and more packing…trying to pack for a week out of town while also packing up everything you own have proven to be challenging.

In other news, I totally didn’t get my run in today. Boo. But I’m planning to get one in tomorrow morning (going for 4.5 miles) and again on Tuesday morning. I leave Tuesday afternoon for a work trip in NYC, so I wont have much time Wed-Fri (or the weekend for that matter, staying in NYC with a friend) to get any runs of decent distance in, so I’ve gotta pound the pavement while I can before I leave!

I hope everyone had a great weekend! I’ve totally spend my free time today reading everyone’s race recaps and have been so inspired! There are so many amazing members of the blog community it’s unbelievable! I’m so thrilled to be a part of it all. 🙂

It’s Official – We Own A Home!

Well it’s official! We bought a house! After our walk through this morning, we got a call from our title company this afternoon that the loan docs were ready and we could come to the office to close!

(so we totally forgot to take pics while signing documents…but that folder right there folks contains a copy of it all! Signed, sealed, delivered, I’m yours it’s ours!)
The walk through was so exciting…we didn’t take any pictures becausae as of right now the appliances are not installed…so it just didnt seem complete. However, the tile, carpet, countertops and blinds are all installed and they looked great! We are so excited to see the finished product soon and to start making a life in our new home!!

Moving day will be here before we know it. We plan to move soon! Maybe even next weekend! Which would sort of rock because I won’t be here. I’m headed to NYC on Tuesday for work throught he end of the week and then staying the weekend to visit my good friend Stephanie! I can’t wait to spend a weekend in NYC during the fall…this midwestern girl misses her favorite season.

So anyway, back to the move…hopefully, if all goes well with the finishing touches on the house, Justin can move while I’m gone Saturday and I’ll come home to our new home Sunday evening…what a great end to a week away from home!

The rest of the evening we ordered take out from PF Changs and parked ourselves promptly on the couch. After watching lots of DIY Network and HGTV (we’ve been bitten by the house bug) we dipped out for a quick trip to Target. We were out of Blueberry Frosted Mini Wheats…my breakfast of choice before a run so we needed to stock up before the Moon Valley Grasshopper Bridge 5K that we are running tomorrow. On the way home we swung through the drive through at Starbucks for an evening treat. Justin went with a chai tea latte and I grabbed a Pumpkin Spice…and this time it tasted deeeeeeeeeeelish!

The rest of my waking hours today will be spent laying on this couch, toggeling back and forth between the TV (aka HGTV) and my book. Fly Away Home by Jennifer Weiner. So far, so good. For those of you who don’t know her, Jennifer Weiner is the brains behind the book ‘In Her Shoes’ which I’m sure most of you have seen by this point…the movie was pretty good, the book was better. She’s been one of my favorite authors for quite some time, and I have to say her first book Good In Bed was definitley the best….if you’ve never read it…you should. While I’m trying to relax this evening, I’m definitley excited for the race tomorrow. Now that I’ve really gotten myself focused on this whole running thing, I think I’m hooked! There was a bit of talk on Twitter a few days ago about running the The Iron Girl 10K in Scottsdale on December 11 and I’m seriously considering it! I have the Phoenix 10K scheduled for November 6th, so that’d be a nice break inbetween races and you can’t beat the weather in Phoeinx that time of year…sooo I may have just talked myself into it!

Alright, time to relax some more and then hit the hay! Look for my 2nd Race Recap tomorrow!

Under Contract…

Today was a crazy day! Woke up early and headed to yoga!

It was an amazing class, per usual. I hadn’t been able to make it in 3 weeks due to travel and it was so nice to get back into that routine! However, due to the insane heat right now in Phoenix, I think I sweat enough in class for about a weeks worth of exercise! Ha!

After yoga it was time to head out for a quick lunch! We landed at a downtown Phoenix spot called That’s a wrap!

I loved this place! I had a rice bowl with brown rice, grilled chicken, black beans, veggies, shredded cheese and a bit of lime sour cream!
After our tummies were full, it was time to see some condos! We saw about 5 condos downtown and sort of liked them but didn’t love them. So we decided to take a drive down near south mountain in Phoenix, a neighborhood Justin’s coworker had recommended we look in. We came across a new construction, gated community with homes right within our price range. We went in took a look, found a house that seriously met allof our needs, was far enough along in the building process that the frame is built but we can still pick all the fixtures and upgrades (score!) and it will be done in time for us to move in before our current lease ends. So,we talked and talked and called our parents and talked some more and decided to go back in and take that house off the market! Sooooooo, we are officially under contract on a house! Now obviously this means we are pending approval of our financing, etc. But if all goes well, we may have just bought a house! Pictures will come once we know more on if the house is actually ours. As well as our adventures in picking out flooring, granite counters and appliances (ahhhh!)

After our crazy busy day of house hunting buying, we came home ate and then I made this super easy, super yummy dessert for us. A homemade deep dish chocolate chip cookie! (well sort of homemade.)

Basically I took a tub of chocolate chip cookie dough (yes, store bought but obviously you can make your own! And I would if I would have had energy tonight!) and I plopped it into a cute little ramekin, threw it into a 350 degree oven for about 15-17 minutes (or until the top is golden brown) and then scooped some vanilla bean ice-cream on top. heavenly absolutely heavenly. I Strongly suggest you make this the next time you want an easy and delicious comfort food dessert.

On another note, I hope everyone on the east coast is safe and sound. My friends and loved ones all seem to be, but I know the worst is not over. C’mon Irene, get it over with already! But honestly, stay safe everyone….

Hope everyone is having a great weekend so far. I’m headed to bed, I have brunch with a friend in the morning and then we are headed back to the potential new house for paperwork (and pictures!)

Last day of freedom!

Morning everyone! So the past few days have been very busy, busy for this girl! I’ve been painting, buying things to decorate our new apartment, buying a new car (!!!), and trying to get as much work done from my previous job in Chicago that I’m working at home for becuase…I start my new job in AZ tomorrow! AHHH!

So let’s start from the beginning. Sunday started off as every other Sunday, got up, had a cup of coffee and a bowl of cereal. Went for a quick workout, did the hills workout on the treadmill for 30 min at level 5 and run speed of 5.5. Came home and got ready to go watch the beloved Lions (they lost!) and then we continued on to the Mazda dealership to test drive a car we had seen a few days before that we had liked. We took that baby out for a spin and next thing we knew we were negotiating a price and driving the car off the lot!! A 2009, white Mazda 6! Here are a few snap shots:

SO THAT is our new baby! So exciting. We are excited to have two cars out here in AZ. With J traveling to the airport every week and me starting my new job so I wont be at home, we just really needed the second car…and we got it,!

Now on to the painting! We decided all the white walls in our apartment needed some sprucing up. We needed it to feel more homey. So I decided I’d paint. Now trust me, I’ve painted a wall or two in my day, but it seems that every time I take on a project like this again, I realize that it’s much more work than I think!! Last night I did the first coat on a few accent walls off the living room, in what we call the ‘dining nook’. Keep in mind this wall needs another coat of paint!

After I painted, I was starving!! Dinner last night was a quick Mexican Meal. I made some taco meat and warmed up some refried beans. Then I heated up some whole wheat tortillas and made little tacos with cheese and a dab of sour cream. It was quick and easy with J being gone and today I can use the left over taco meat for a taco salad for lunch!

The rest of my day today is going to consist of getting a ton of work done for my current job, putting a second coat of paint on that wall, maybe starting to paint another wall (ahh ambitious goals), getting a work out in and heading out to get my Arizona Driver’s License! I still have my MI license (yes I lived in Chicago for 3 years and never changed it!) Whoops! so it’s time to get on getting a new license!

For breakfast this morning I’m going to throw together a quick yogurt with almonds and granola and have a cup of coffee. I’ve gotta get cracking on my work!
